  • 1/4 kg Brinjal
  • 3 pcs Tomatoes
  • 1 tsp Chilli Powder
  • 1 tsp Pepper Powder
  • 1 1/2 tsp Salt
  • 1 tsp Coriander Seeds Powder
  • 1/2 tsp Turmeric Powde
  • 2 pcs Green Chillies
  • 1 tsp Ginger Garlic Paste
  • 1 1/2 tsp Cumin Seeds
  • 2 pcs Onions

Let’s see how to make easy pepper brinjal curry

Heat 1 tablespoon oil in pan
Add 1/ 2 teaspoon cumin seeds
Add chopped onions and fry till they turn transparent
Close lid and cook
Add green chillies, 1/2 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and fry
Add diced tomatoes and fry till they become soft
Close lid and cook till oil seeps out of the tomatoes
Add 1 teaspoon chilli powder, 1 teaspoon coriander seeds powder, 1 1/2 teaspoon salt or salt to taste and mix
Add diced brinjals and mix
Since we are using pepper powder, the curry will be very tasty
Close lid and cook on low flame for 5 minutes
We can see that the water seeps out of the brinjals
Close lid and cook for 2 more minutes
Add 1/2 cup water and cook
Add pepper powder and mix
Sprinkle coriander leaves and simmer for 2 minutes
Cut off the stove and serve hot with rice or roti
