Mango Pickle

Mango pickle is mouth watering south indian recipe . it tastes better with rice. here we see how to make mango pickle in telugu by Hyderabadi Ruchulu.

4 Green Mangoes

4 tbsp Chilli Powder

3 tbsp Salt

1 1/2 tbsp Mustard Seeds Powder (Optional)

Cumin-Fenugreek Seeds Powder

3 tbsp Ginger Garlic Paste

For Tempering

2 tsp Cumin Seeds

2 tsp Mustard Seeds

1-2 tsp Dried Chilli Seeds

Let’s see how to make mango pickle with green mangoes

 

This a very easy and tasty mango pickle Peel and chop the mangoes into pieces

Grinding 1 teaspoon of cumin seeds with 1/2 teaspoon of fenugreek seeds

will make cumin-fenugreek seeds powder

Let’s prepare tempering first since it has to be cooled down before mixing it with the mango pieces

Heat 3-4 tablespoons oil in pan

Add 2 teaspoons chilli seeds and fry till they change colour

Then Add 2 teaspoons mustard seeds, 2 teaspoons cumin seeds, fry Dried chillies and curry leaves also could be added here

Add half of the ginger garlic paste, i.e., 1 1/2 tablespoons ginger garlic paste to the tempering Fry for a minute and cut off the stove

Let the tempering cool down

In the mean time, lets prepare the mango pieces

Add 3 tablespoons salt or salt to taste and mix

Add 4 tablespoons chilli powder,

1 teaspoon cumin-fenugreek seeds powder,

1 1/2 tablespoon mustard seeds powder,

Add rest of the ginger garlic paste and mix

Add the prepared tempering and mix

Mango pickle is ready! Store it an air tight container away from moisture.

This pickle could be used for 1-2 months.
