Gongura Egg Curry Recipe Preparation at Home
Preparation of Sorrel Leaves Egg Curry Recipe. Simple Gongura Egg Curry Recipe
- 6 pcs Boiled Eggs
- Sorrel Leaves
- 2 tbsp Oil
- Whole Gram Masala
- 2 pcs Onions
- 4 pcs Green Chillies
- 1/2 tsp Turmeric Powder
- 1/2 tsp Ginger Garlic Paste
- 2 pcs Tomatoes
- 1/2 tsp Chilli Powder
- 1 tsp Coriander Seeds Powder
- 1/2 tsp Cumin Seeds
- 1 tsp Salt
GONGURA EGG CURRY
To make the sorrel leaves egg curry we need to boil the eggs first
Here I boiled 6 eggs
Make cuts in them
We need to boil the sorrel leaves now
Here I took the paste of the leaves
This paste once prepared can be used for 2 months atleast

If fresh soreel leaves are being used, then boil the cleaned sorrel leaves in water for 5-6 minutes
Let them cool down and grind it into a paste
Heat 2 tablespoon oil in pan
Add boiled eggs and fry till they turn brown
In the same oil, add whole garam masala – 3 cardamom, 4 cloves, 2-3 cinnamon stick pieces, 1/2 teaspoon shahjeera, 1/2 teaspoon cumin seeds and fry for a minute
Add 2 chopped onions and fry
Close lid and cook till they turn transparent
Add 4 green chillies and fry for a minute
Add 1/2 teaspoon turmeric powder, 1/2 teaspoon ginger garlic paste and fry
Add 2 diced tomatoes, close lid and fry till they become soft
Add 1/2 teaspoon chilli powder, 1 teaspoon coriander seeds powder, 1/2 teaspoon cumin seeds powder, salt and mix
Add 1/2 cup water, 2 tablepoons sorrel leaves paste and mix
Cook for a couple of minutes and add the fried eggs
Close lid and cook on low flame for 7-8 minutes
Here paste of onions and tomatoes could also be used instead of dicing them
As the gravy thickens, sprinkle some coriander leaves and mix
Serve hot wit rice or roti
